S’mores Trifle

A delicious twist on the Kiwi trifle

Ingredients

Brownie

500g Bakels Chocolate Brownie Baking Mix
150g Butter - Softened
2 Eggs

Marshmallow Layer

4 Large Egg Whites
340g Caster Sugar
5 Tablespoons Golden Syrup
1 Teaspoon Cream of Tartar
1 Teaspoon Vanilla Extract
250g Graham Crackers or Plain Digestive Biscuits

Method

  1. To make and bake the chocolate brownie, follow the instruction according to the back of pack.
  2. Once baked, allow to cool completely or overnight.
  3. Slice brownie into 2-3cm squares and set aside.
  4. To make the marshmallow filling, mix together the egg white, caster sugar, golden syrup, cream of tartar, couple pinches of salt and 2 tablespoons of cold water in a large heatproof bowl.
  5. Place bowl over top of a pot of simmering water, making sure the bowl doesn’t touch the water.
  6. Beat mixture with a hand-held mixer for about 5 minutes or until sugar has fully dissolved and soft peaks start to form.
  7. Remove bowl from the heat, add vanilla extract and beat for another couple of minutes until light, fluffy and spoonable.
  8. To assemble, place half of the cut squares of brownie in to the base of a serving bowl.
  9. Spoon or pipe ⅓ of the marshmallow over top, sprinkle with half a pack of broken biscuit pieces.
  10. Follow with another ⅓ layer of marshmallow, the remaining squares of brownie, then the remaining ⅓ of marshmallow.
  11. Top with more broken biscuit pieces and your dessert is complete.
  12. Enjoy.
