Pineapple Fruit Cake

A delicious and moist gluten free cake.

Ingredients

2 cups BAKELS GLUTEN FREE FLOUR
450g mixed fruit
1 tsp mixed spice
1½ tsp baking soda
425g crushed pineapple
1 cup sugar
110g butter
2 eggs (beaten)
1½ Gluten Free baking powder

Method

  1. Put sugar, pineapple, mixed fruit, baking soda, mixed spice and butter in a saucepan and bring to the boil for 3 minutes.
  2. Remove from the heat and when cooled add the sifted Bakels Gluten Free Flour and baking powder to beaten eggs and combine all together.
  3. Place mixture in a greased, well lined 20cm tin and bake in a moderate oven at 160°C for about 11/2 hours.
  4. Reduce heat to 140°C and bake for a further 20 minutes.
