Never Fail Sponge

A versatile gluten free sponge.

Ingredients

4 eggs (separated)
2 Tbsp boiling water
12Tbsp maize cornflour
175g sugar
2 Tbsp BAKELS GLUTEN FREE BAKING MIX
1½ tsp baking powder

Method

  1. Beat egg whites until stiff and add sugar dissolved in boiling water.
  2. Beat again until thick and all sugar grains are dissolved.
  3. Add egg yolks and mix well, add remaining dry ingredients and fold in slowly.
  4. Bake in 2 greased cake tins.
  5. Bake at 180°C for approximately 20 minutes.
