Ingredients

Cookie Base

500g (1 pack) Bakels Gold Label Chocolate Chunk Cookie Mix
120g Butter - Softened
1 Egg
Caramel

395g Tin of Sweetened Condensed Milk
100g Butter
2 Tablespoons Golden Syrup
1 Teaspoon Vanilla Extract
Chocolate Top

240g Dark Chocolate
3 Teaspoon Vegetable Oil

Method

  1. Preheat oven to 180°C bake and line a 20cm square baking tin with greaseproof paper and set aside.
  2. To make the caramel, combine together the caramel ingredients in a saucepan until warmed through and smooth.
  3. Set aside to cool slightly.
  4. While the caramel is cooling, mix together the cookie base ingredients in a medium sized bowl on a low speed until combined or you can mix and combine by hand.
  5. Evenly press and smooth dough out into the base of prepared baking tin and bake for 20 minutes or until top is golden.
  6. Remove from the oven and allow to cool for 10 minutes.
  7. After 10 minutes, pour the caramel over top of cookie base and return to the oven for another 25-30 minutes or until top and edges of caramel are golden.
  8. Finally, melt and mix together the dark chocolate and oil in a medium bowl over boiling water and once melted and smooth, pour over top of the slice.
  9. Place in the fridge to set for a at least 3 hours before slicing and serving.
