Loaded Banana Cake with Caramel

Gold Label Banana Bread Mix, per instructions
In a stand mixer add
¼ jar/tin caramel
25g butter (soft)
1½ cups sifted icing sugar
Pinch salt
2 Tbsp cream (or milk) + more if needed


  1. Mix Gold Label Banana Bread Mix according to instructions.
  2. For results similar to the photo, split batter across two cake tins.
  3. Bake time may be less, so check with skewer or knife in center until comes out clean.
  4. While the cakes are in the oven, whip up the caramel frosting.
  5. Beat on high until light + fluffy.
  6. Add more cream if needed so it’s spreadable + creamy.
  7. Once the cakes are cold, assemble by spreading 1/2 the frosting on top of the first cake, then a layer of sliced banana, then the second cake, then the rest of the frosting, more sliced banana, grated chocolate + caramel sauce.
