Double Chocolate Pretzel Cookie

Ingredients

500g Bakels Chocolate Cake Baking Mix
80ml Oil
2 Eggs
100g White Chocolate
100g Dark Chocolate
30g Pretzels

Method

  1. In a large bowl, add the Bakels Chocolate Cake Baking Mix, oil and eggs (lightly beaten) and mix together with a spoon until a dough comes together.
  2. Chop up chocolate and fold through the dough, along with broken up pieces of pretzels.
  3. Cover and place in the fridge for 30 minutes to chill slightly.
  4. While the dough is chilling, heat the oven to 180°C bake.
  5. Line a baking tray with greaseproof paper and set aside.
  6. After 30 minutes, take the dough from the fridge and roll half of the dough into golf-sized balls, then flatten slightly between the palms of your hands and place onto prepared baking tray.
  7. Cookies will expand when baking, so make sure they have plenty of space.
  8. Return the remaining half of the dough to the fridge because you’ll be baking these cookies over two batches.
  9. Bake the first tray of cookies for 11-12 minutes, then remove from the oven and allow to cool for 5 minutes.
  10. When Cookies are firm enough to move, place onto a baking rack and then allow the baking tray to cool completely.
  11. Repeat step 4 by rolling out the remaining dough into balls and then bake for another 11-12 minutes.
  12. Once the second batch has baked, allow cookies to cool or enjoy them warm from the tray.
