Christmas Pudding

A delicious gluten free Christmas pudding that the whole family will enjoy.

Ingredients

1 cup BAKELS GLUTEN FREE FLOUR
1 tsp allspice
1 tsp cinnamon
1 beaten egg
1 cup finely chopped butter
1 cup hot milk
1 cup stale GF breadcrumbs
1 cup brown sugar
pinch of salt
1 tsp Gluten Free baking powder
3 cups of mixed fruit
1 cup dates
1 cup cherries and Ginger
½ cup almonds

Method

  1. Soak fruit in brandy overnight.
  2. Pour hot milk over breadcrumbs and add beaten egg, brown sugar and butter.
  3. Add sifted dry ingredients then add fruit. Steam in a greased basin for 3 hours.
