Banana Muffins

Delicious fresh or store in the freezer. Great use for old bananas.

Bake: 15 - 20 mins
Eat: Makes approximately 10 muffins.

Ingredients

60g butter, softened
1 cup mashed bananas
¼ cup water
2 Tbsp hot milk
⅓ cup sugar
1 tsp baking soda
3 eggs
1¼ cup BAKELS GLUTEN FREE BAKING MIX

Method

  1. Cream butter and sugar until light and fluffy.
  2. Beat in eggs 1 at a time beating well after each addition.
  3. Stir in banana & water and mix thoroughly.
  4. Stir baking soda into hot milk and add to creamed mixture.
  5. Add Bakels Gluten Free Baking Mix and stir together well.
  6. Spoon mixture into well greased muffin tray. Bake at 180°C for 15-20 minutes, or until done.
