Double Chocolate Pretzel Cookie
Ingredients
500g Bakels Chocolate Cake Baking Mix80ml Oil
2 Eggs
100g White Chocolate
100g Dark Chocolate
30g Pretzels
Method
- In a large bowl, add the Bakels Chocolate Cake Baking Mix, oil and eggs (lightly beaten) and mix together with a spoon until a dough comes together.
- Chop up chocolate and fold through the dough, along with broken up pieces of pretzels.
- Cover and place in the fridge for 30 minutes to chill slightly.
- While the dough is chilling, heat the oven to 180°C bake.
- Line a baking tray with greaseproof paper and set aside.
- After 30 minutes, take the dough from the fridge and roll half of the dough into golf-sized balls, then flatten slightly between the palms of your hands and place onto prepared baking tray.
- Cookies will expand when baking, so make sure they have plenty of space.
- Return the remaining half of the dough to the fridge because you’ll be baking these cookies over two batches.
- Bake the first tray of cookies for 11-12 minutes, then remove from the oven and allow to cool for 5 minutes.
- When Cookies are firm enough to move, place onto a baking rack and then allow the baking tray to cool completely.
- Repeat step 4 by rolling out the remaining dough into balls and then bake for another 11-12 minutes.
- Once the second batch has baked, allow cookies to cool or enjoy them warm from the tray.
