Loaded Caramel Carrot Cake
Ingredients
1 Gold Label Carrot Cake Baking Mix as per pack, PLUSHandful of chopped White chocolate chips for decoration (optional)
CARAMEL FROSTING
In a stand mixer add
¼ jar caramel
25 grams soft butter
1½ cups sifted icing sugar
Pinch salt
2 Tbsp cream + more if needed
Method
- Make up Gold Label Carrot Cake and bake as per instructions.
- Split batter into two tins for this recipe.
- While the cake is baking, mix all the frosting ingredients and beat on high until light + fluffy.
- Add more cream if needed so it’s spreadable + creamy.
- Once the cakes are cold, assemble by spreading 1/2 the frosting on top of the first cake, then the second cake, then the rest of the frosting, chopped white chocolate chips + caramel sauce.
Gently heat up the caramel in the microwave so it’s easy to pour.
