Cheats Chocolate Meringue Cake

Gold Label Moist Chocolate Cake per instructions, PLUS
4 egg whites
1 cup of castor sugar
1 tsp white vinegar
3 tsp of corn flour
¼ cup of sifted cocoa


  1. Make up Gold Label Brownie Baking mix as per instructions but only bake for 20 minutes so its still a little soft on the inside and wobbly to touch.
  2. To make meringue beat 4 egg whites until peaks form.
  3. Add 1 cup of castor sugar one table spoon at a time.
  4. Scrape down sides as required.
  5. Add one tea spoon of white vinegar, whisking until its thick and glossy.
  6. Add 3 tea spoons of corn flower and ¼ cup of sifted cocoa and whisk until combined.
  7. Carefully spoon over cake and bake for around 20 minutes.
  8. Cool in the tin, running knife around the inside.
  9. Pop into fridge for an hour.
  10. Serve with a dusting of cocoa.

You can substitute ¼ cup of milk for 200g ricotta

Serve on a plate, dusting with cocoa which makes even the most rustic result look impressive!
